What Is...Frozen Custard?

To put it simply, all frozen custard is ice cream, but not all ice cream is frozen custard. Like ice cream, frozen custard contains cream and sugar, but the similarities end there! In addition to the cream and sugar, frozen custard contains egg yolk and butterfat! Those ingredients are essential to the super creamy flavor and the smoothness of frozen custard.

Another difference between frozen custard and ice cream is the way they are made. All ice cream (including frozen custard) is made using a process called overrun, where air in blended into the mixture of ingredients which increases its volume. Frozen Custard typically has a 20% overrun. By comparison, ice cream has a 100% overrun, meaning that half of the finished product is composed of air.

The final difference between frozen custard and ice cream is the speed at which they are produced. Junior’s frozen custard is prepared fresh, but is not what you would call “soft serve”. Ice cream can be served frozen or from a soft serve machine, but there is only on way to make frozen custard…and that is slowly. A frozen custard machine slowly forces finished product through the tube or “chute”. This process does two things. It allows the frozen custard to gain the low overrun percentage and the ice crystals that are formed are very small and tightly packed giving the custard a far denser consistency than that of regular ice cream.

 

What Is...A Horseshoe?

A central Illinois specialty which originated in Springfield in 1928, a “Horseshoe” is an open-faced sandwich which can contain a variety of meat on toast topped with French fries and cheese. The Junior’s Horseshoe is a double burger laid open on a toasted bun topped with our crinkle fries and tangy cheddar cheese sauce.

 

What Is...a Bomber Fry?

Named after Junior’s high school mascot, the Bomber fries are undoubtedly one of the best items on the menu. A heaping portion of seasoned waffle fries topped with our tangy cheddar cheese sauce, onions, jalapenos, bacon bits and sour cream – easily a meal in themselves! They are available in full (12 oz.) and half (6 oz.) sizes.

 

What Is...a B-Money?

This sandwich was invented by Junior’s brother, Brent, in the early days of operation. After days and days of eating a grilled chicken sandwich and a bacon cheeseburger at lunch, Brent, or B-Money as he is affectionately called, put everything together…one bun, one burger, one chicken breast, and three strips of bacon. Serious eaters only!
